Spring Recipe
By Susan Cohen 1/2 red onion sliced thin 1 cup shitake or any combination of mushrooms olive oil 2 scallions 1 lemon use the juice and grate the peel 1 or 2 garlic cloves Sea Salt Saute the onion in the oil and add a pinch of salt til lightly brown Add mushrooms, saute til lightly brown and add a pinch of salt Saute the garlic for 1-3 minutes Add 4 cups of water and bring to a boil,then use a low/medium heat and cook for 15-20 minutes Add salt to taste Turn off the heat and add lemon juice Garnish with scallions and lemon rind. Enjoy!
